Cymbopogon citratus is a plant commonly used as a s pice by the people in Indonesia. Utilization is lim ited to the stalks lemongrass only, while the leaves are still become waste. This research aims to study the poten tial of lemongrass leaves extract for the prevention of oil oxidation. Extraction wasused by maceration method on lemongrass leaves using ethanol 30, 70 and 96% and qualitative test of phytochemical components, deter mination of total phenolics and antioxidant activity on extract s of lemongrass leaves. Phytochemicals analysis res ults showed that the ethanol extract of leaves of lemongrass co ntains alkaloids, saponins, tannins, flavonoids, ph enols, and steroids. The highest total phenol content was in t he 30% ethanol extract of 50.017GAE (Gallic Acid Eq uivalent) mg/g. Ethanol extract of lemongrass leaves is poten tial as an antioxidant because its inhibitory again st free radical DPPH (2,2-diphenyl-1-picrylhydrazyl). The best IC 50 values was obtained in the 70% ethanol extract of 79.444 mg/L. The highest antioxidant activity by Rancimat instrument occured in 70% ethanol extract.
